Zuni Indian Bread

This whole-grain loaf is a favorite of mine and my friends truly appreciate this as gift breads.

Bake Cycle: Whole Wheat/ Medium Crust

Optional Bake Cycles: Standard; Sweet Bread

Ingredients:

5/8 to 3/4 cup buttermilk

1 egg

1 tbsp. butter or margarine

2 tbsp. molasses

1 tsp. salt

1 cup whole wheat flour

3/4 cup bread flour

1/4 cup cornmeal

1/4 cup raw unsalted sunflower seeds

3 tsp. active dry yeast

Optional: 1 tbsp. vital wheat gluten

Directions:

Using the least amount of the liquid indicated in the recipe, place all the ingredients in the bread pan. Select Medium Crust then the Whole Wheat Cycle. Press start.

After 5-10 minutes, observe the dough as it kneads, if you hear straining sounds in your machine or if the dough appears stiff and dry, add 1 tbsp. liquid at a time until the dough becomes smooth, pliable, soft, and slightly tacky to the touch.

Remove the bread from the pan after baking. Place on rack and allow to cool for 1 hour before slicing.
